Homemade marshmallows. There is such a thing! One of my very first posts on this blog was my wonder and amazement over discovering food porn and food bloggers. I mentioned that I made marshmallows and attempted to make peeps. Only two turned out. I’m still trying to find the picture of those two lonely peeps. I know I have it somewhere.
It’s funny to think of all the food pics and posts I’ve taken since then. I digress. Pumpkin spice marshmallows have been on my radar since the beginning of the season {fall? pumpkin season? yes, they are one and the same}.
This batch turned out very, very well. I used this recipe and although it had a little too much spice for me, Thom enjoyed them and so did my coworkers. And, they made exceptional Pumpkin S’mores:
For the S’mores:
Pumpkin marshmallows
Cinnamon graham crackers
White chocolate {get a good quality chocolate bar: I used this}
Build a fire and let it die a bit to form a bed of red-hot coals. Roast the marshmallows over the coals turning constantly. These homemade marshmallows melted so easily- so it took a few times to get the perfect caramel-y outer crust. Toasty on the outside, melty pumpkin goodness on the inside.
The marshmallows don’t get quite hot enough to melt the chocolate but the pumpkin s’more was still a success.

I made marshmallows last year and they were so much better than store bought! I did some with no flavoring and some with peppermint for hot chocolate. Can’t wait to try these. Thanks,
