Hi Friends…It’s been a little over a month since I last posted. It has been a busy summer. Thom’s kids have been visiting. We’ve driven to Kentucky and are trying to beat the heat. It’s definitely been the hottest summer since I’ve been here. Still posting from the library so posts will probably be infrequent. Hope y’all are well and feeling FINE!
…Salad to tide you over..
It’s been in the mid to upper 90s down here in Ark…and we haven’t felt much like cooking…so it’s been cold sandwiches and salads for lunches and dinners around the Lake House. Cold doesn’t mean boring though…and I LOVE this salad!
Southwest Pasta Salad
1 lb Rotini
1 cup frozen corn
1/2 cup black beans
1 red bell pepper, diced
1 yellow bell pepper, diced
1 small red onion, diced
1/2 cup cilantro, chopped
3 tbsp lime juice
3/4 cup White BBQ sauce
White BBQ Sauce
3/4 cup Mayo
2 tbsp cider vinegar
2 tsp sugar
1/2 tsp horse radish
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
Whisk all ingredients together until smooth. Refridgerate for up to 2 days.
Instructions:
Cook pasta & when it’s almost al dente, add corn. Continue to boil until corn is heated through and pasta is done. Drain and rinse with cold water.
While pasta is cooking, combine veggies and cilantro in a large bowl. Mix in lime juice and BBQ sauce. Add pasta and corn and toss to coat evenly.

…I think I’m going to experience my first ever real hot Arkansas summer. It’s been in the mid to upper 90s this last week. I think I’ll do okay with the heat.
Fireflies have been fluttering about our yard and for some crazy reason I wanted to catch me a jar-full….so I spent Memorial day evening sitting in the driveway waiting for some to fly near {have I mentioned that I won’t venture out into the yard for fear of fleas, ticks,chiggers, and copperheads?}. I wasn’t able to catch one in my nifty little net…but Thom caught one later {barehanded!} and brought it in to me.
It stayed in the jar overnight. I didn’t see it light up one time. I felt bad the next day so I decided to let him go….and then he wouldn’t, or couldn’t fly. I wonder if I took away it’s magic trying to catch some of it for myself?

…Chocolate Chip Cookie Dough Truffles
Heather and I spent a lot of time making chocolate chop cookie dough in our youth. I don’t think the dough ever evolved into cookies though! These days we have to worry about salmonella so I try to stay away from raw cookie dough {okay, who am I kidding? I still have a taste, or ten…don’t tell Thom!}.
I may have found a better alternative. Although, it isn’t much healthier. LOL. Just don’t think about how much butter you’re consuming. After all…it’s divided into each little truffle. How bad could it be?
These were awesomely delish. I coated half the truffles with white almond bark…and I actually liked them better than the chocolate. Try them!! Find the recipe here
