I’ve had this Pumpkin Spice Cheerios Snack Mix on my mind since it was released back in 2016 but I never dug in to figure out how to make a sweet snack mix because, well, inevitably, I would devour the entire box of Pumpkin Spice Cheerios before figuring out a recipe. I might also mention that I normally limit myself to one box per season in order to enjoy aforementioned “all things pumpkin.” I did have to buy a second box in order to produce this sweet and salty cereal snack mix, but it was all in the name of bringing the pumpkin goodness to the masses.

When September comes around I am primed to start gorging on pumpkin-flavored anything. It all starts with that first pumpkin spice latte at Starbucks but the funny thing is that I don’t even like them. I just patiently sip my pumpkin spice lattés for the first few days of what I like to call “Pumpkin Eatin’ Season” and wait for more delicious pumpkin items to hit the store shelves. I love it all: the scones, cookies, popsicles, pancakes, bread, ice cream, ravioli, soup, fudge, pies and the list goes on and on.

I was thrilled when Gina asked me to do a guest post for her Month of Pumpkin, so I wanted to post a recipe inspired by her. I know she is mostly vegetarian, so I wanted to make sure it was something she would feel comfortable eating. She loves savory dishes, but I know she likes desserts, too.  A few years ago,  Gina posted a recipe for Pumpkin Spice Syrup for making a delicious Pumpkin Spice Latte. I enjoyed those lattes throughout the winter. And that syrup is what gave me the inspiration to make Pumpkin Walnut Baklava. Pumpkin, nuts, pumpkin pie spices, phyllo dough, butter, sugar, then instead of a honey-based syrup,  saturate it all with the Gina’s Pumpkin Spice Syrup! Why not.
