Dipped cookies have always been one of my very favorite go-to foodie gifts because its so easy to melt some candy coating, dip cookies, let them set up, and they’re so tasty, too.
Tips for Melting Candy Coating
For even more festive fun, choose colored candy melts to match the occasion. TIP: I’ve found that candy coating is easier to work with when you start off with colored candy melts as opposed to coloring the candy coating yourself using food coloring or coloring paste. The candy coating/melts tend to seize up when other liquids are introduced.
Melt the candy coating or melts according to your packages instructions. Differences in brand and appliance voltage definitely affect how easily your melts will perform.
Tools to Make Dipping Cookies Easier
- Having the right tools helps make dipping the peanut butter stuffed cookies easier. I’ve had this plastic Wilton candy making tool in my toolbox for ages but this updated set of candy making tools is drool worthy in it’s own right. I’ve added it to my wish list.
- Set the dipped cookies on cookie sheets lined with waxed paper.
- This cool melting pot has been on my wishlist for years because I always take so long dipping or I get distracted while dipping cookies and have to remelt or reheat my candy melts.
PB Stuffed Cookies Recipe
Ingredients
- Chocolate sandwich cookies
- Vanilla candy coating
- Holiday sprinkles
- Peanut butter
Tools
- Chocolate dipping fork (or kitchen fork)
- Bowl for melting candy coating
- Cookie sheet
- Parchment or Waxed paper
- Microwave
Instructions
- For each cookie: twist off top and spread 2 teaspoons peanut butter over cookie. Replace top.
- Melt candy coating according to package instructions
- Place cookie into melted candy coating and remove excess coating on the edge of the bowl. Place on waxed paper or parchment paper.
- Add sprinkles, if desired, while candy coating is still wet.
- Repeat with remaining stuffed cookies.
- Optional: place contrasting melted colored candy coating into a plastic baggie; snip corner and drizzle over coated stuffed cookies.
- Place cookies in refrigerator to set up.
