A few weeks ago, I had the opportunity to travel to Ruston, Louisiana for a week with TJ Maxx and while I was there I enjoyed THE BEST tuna salad. I had to come home and recreate it. Thus, Copycat Uptown Tuna Salad was born. I love it almost as much as this one.

Ruston was such a fun town! I had never been to Louisiana, so I was excited to explore when I could (which wasn’t much as I ended up working 50+ hours that week between the new store and travel time).The downtown area was so quaint. They totally had me at twinkle lights, coffee shops, and eateries. The Uptown Downtown Cakery, Bakery & Eatery was on my must-visit list.I missed lunch the first day because they only serve lunch 11am-2pm. No matter. I took a cupcake home and returned the next day.The toasted walnuts and granny smith apples added a crunch and sweetness to the tuna that was so pleasant. I never would have thought to add them on my own.
Copycat Uptown Tuna Salad Recipe
Ingredients:
- 4 (5 oz) cans of tuna packed in water, drained
- 1 cup mayonnaise
- 1/3 cup finely diced celery (about 1 rib)
- 1/4 cup finely chopped red onion
- 2 tablespoons sweet relish
- 1 hard boiled egg, finely chopped
- 1 clove garlic, minced
- Salt & pepper to taste
- Spring greens mix
- 1 Granny Smith apple, chopped
- 1/2 cup toasted walnuts
Instructions:
- Drain tuna and add to bowl. Add mayo, celery, red onion, relish, chopped egg, and garlic.
- Stir to combine.
- Season with salt and pepper.
- For each serving, add spring greens to plate. Top with 2-3 scoops tuna salad.
- Top with apples and walnuts.
- Serve and enjoy!
