It’s true. A while back, I was scrolling the ‘Gram when I instantly thumb stopped on one Grammer’s post about a product she loved: a jalapeño black bean bowl. It was a pre-packaged dinner and it looked extremely good. But, I thought to myself, I CAN MAKE THAT! So off I went, in search of a good tomato sauce to put together this no-brainer recipe-a perfect Pin It Spin It!

Jalapeño Black Bean Tomato Bowl
Seriously. Make this and it will be like a spicy, warm hug happening from the inside out. Or, something like that.

The Spin:
- I ignored the part of the recipe for the meatballs because we don’t eat meat. For this jalapeño black bean tomato bowl, I used the sauce recipe from the link above.
- Added 2 or 3 sliced jalapeños, seeds and all. I like it SPICY!!
- Added one bag of Riceland boil-in-bag brown rice.
- This recipe made A LOT. I ended up freezing/eating this while Thom was away for a couple of weeks.
The Verdict: I loved this dish. And, like I said, I was eating this a lot while Thom was away visiting his kids.
A dollop of sour cream on top and more cilantro was a great finish. Adding sour cream is also a good way to cut down the spiciness, if that’s not your thing. Omit the jalapeños, even.
Loved this dish so much, it inspired me to make stuffed peppers!
Tools to Make this Jalapeño Black Bean Tomato Bowl
- Cast iron skillet-I love using cast iron to cook with.
- Pepper Corer-for coring the jalapeños, epecially if you don’t want that extra spiciness from the seeds. I especially like the Good Grips brand.
- Food Safe Disposable Gloves-have you ever chopped a jalapeño and then rubbed your eye? Gloves are handy (see what I did there) for not handling the jalapeños.
