You know those Halloween parties where all the foods are creepy and cut out into fun Halloween themed shapes to make it fun for kids? I love them. I mean, I love to eat fun Halloween foods and I love to make them. Hence, Balsamic Pesto Pizza on Frankenstein Flatbread. Halloween fun shouldn’t be reserved for kids. And, Halloween foods don’t have to be childish.
My friend Lacie, and I were walking through the grocery store a few weeks ago looking for Halloween-food inspiration for kids. I grabbed this loaf of artisan flatbread and instantly thought of Frankenstein. It would be perfect for a flatbread pesto pizza and perfect for Lacie’s blog. Except, she reminded me, most kids don’t like pesto.

But, most adults do love pesto and I happen to have a great pesto recipe. Let’s make it!
Balsamic Pesto Pizza
This semi-homemade pesto pizza couldn’t be any easier. I know a lot of people are intimidated by the thought of making homemade pesto-but really, it couldn’t be any easier. In fact, Thom and I made this pesto in under 15 minutes!
Never fear, though! You can absolutely make this with jarred pesto. In fact, this one is my fave.
For this pizza you’ll need:
- 1 batch of this pesto. (this is enough for 4 Frankenstein pizzas)
- 1 package of this artisan flatbread
- Balsamic Glaze
- Assorted cheeses- I used Feta and Provolone
- Olives (optional)
Putting this together is so easy.
- Cut artisan flatbreads in half.
- Divide pesto evenly over each flatbread quarter.
- Top with Feta. Cut slices of Provolone and arrange as desired.
- Add olive eyes and bolts, optional.
- Bake for 7-8 minutes at 425 degrees.
- Broil for 1-2 minutes for some color, if desired.
- Remove from oven and drizzle balsamic over the top for hair and/or make eyes and a mouth with balsamic instead of the olives.
The sweet balsamic glaze is the perfect counter to the garlic-y pesto.
