Does it seem like every single Pin It & Spin It lately has been food? That’s probably because it has. Since I’ve been working from home, I’ve had more time to cook. Or, is it more time to peruse Pinterest? Either way, there’s been more cooking and eating going on around here lately. And, I’m not mad about that at all. Especially when the eatin’ is Parmesan Ricotta Spinach Pasta.
That is until it’s time to put pants on. Ha!!
Parmesan Ricotta Spinach Pasta
This delicious looking pin had me thinking about it for weeks. Spaghetti is usually something we always have on hand, but we’re not supposed to be eating it so I’ve resisted buying it. My theory lately is that if I can’t stop thinking about it, I just go ahead and buy it and enjoy a meal rather than stuff my face with a bunch of other not-so-great-for-us foods because I’m trying to satisfy a craving. For some reason, it just doesn’t work that way.
Now, the original easy spinach ricotta pasta recipe was a budget friendly pasta. I had a wedge of Parmesan in the ‘fridge and decided to add that. I also doubled the recipe. Pasta for days. Not really budget friendly for us or good for us since we’re supposed to be cutting carbs.
Honestly, the recipe was a little boring for me. (Maybe that’s because I ate it for three days? 🤷🏻♀️ Or, maybe it’s because I’ve become accustomed to SPICY food. I added some red pepper flakes for some heat and it kicked this Parmesan ricotta spinach pasta up a notch. Will I make it again? Sure. If I’m craving cheesy pasta. I usually have all these ingredients on hand, so the likelyhood is possible.
