I may have taken a literary moment there for the sake of a good opening statement. There’s been no real failure around here lately, despite my slight moping around feeling uninspired and uncreative. Not creative? You know what I mean.
Lemon Crumb Cake Recipe Review
One of my most favorite things about being home more is how many new dishes we’ve been making. Pinterest has been a very good friend lately. My LEAST favorite, in case you’re wondering, DISHES. I really need to invest in a dishwasher.
It seems we’ve jumped directly from freezing cold to blazing hot and I’m not mad about it at all. Not even when I decide I need to make this lemon crumb cake at 9pm and the kitchen is still hot and the oven will need to be cranked up.
What makes night time baking even better is realizing you have all the ingredients on hand.
This lemon crumb cake recipe has three parts, each easy to put together.
I baked mine in a 9″ springform and followed the directions fairly well. I say fairly, because I didn’t notice the part where it says to NOT push the cheesecake layer to the edges. I tried to push back the layer but it didn’t work out so well. It didn’t seem to make a difference during the baking process, though.
Lemon Crumb Cake Verdict:
SO SO GOOD. Will definitely make this again.
- The bottom cake layer had a great crumb.
- I thought the cheesecake layer could use more cheesecake (and I do have to admit I had slightly less cream cheese than what was called for, so this may have been the baker’s error).
- The STAR of the show? That crumb topping, y’ll! It had the perfect amount of sweeet and crunchy.
This pin & recipe is definitely a keeper. I just can’t decide if I like it better warm straight from the oven or cold with a glass of milk. I’ll just keep trying it both ways until I can make up my mind. 😉
