Pumpkin Oatmeal Latte: a cozy fall breakfast that combines two of my most favorite things. Coffee & pumpkin spice.

Fall is synonomous with pumpkin, pumpkin spice, pumpkin-spice-everything. At least, for me it is. It may seem as though my love for all things pumpkin has waned in the last few years as I dropped my A Month of Pumpkin posts, but I assure you; I am still eating, dreaming, and loving all the pumpkin.
If loving all things pumpkin spice is basic, I don’t want to be anything but basic.
Pumpkin Oatmeal Latte
Full disclosure: the idea for an oatmeal latte is not mine. I saw something similar on one of those Facebook videos; oatmeal swimming in steaming hot espresso with a touch of brown sugar and topped with granola. I’m all about the coffee with morning brekky so the idea intrigued me. When I went to the cupboard to grab the ingredients, my box of Quaker Oats Pumpkin Spice instant oatmeal caught my eye (the box of pumpkin spice oatmeal was sitting on top of the box of pumpkin spice Cheerios <insert laughing/crying emoji>).
I had granola on hand, too, but I love pecans with pumpkin and I stocked up for my fall baking plans (which reminds me: I need to share my fall baking bucket list).
Thom has been making me a pot of coffee at night and putting it in the ‘fridge for me to reheat in the mornings while I work. My coffee of choice lately?
You guessed it: pumpkin spice. My fave brand is Dunkin’ Donuts Pumpkin Spice ground coffee. We normally prefer to grind beans for a stronger, rich, fresher flavor but I haven’t found the pumpkin flavor in beans yet.
I love oatmeal in the morning. It’s a “stick to your ribs” kind of breakfast and I feel fuller, longer.

- Quaker Oats Pumpkin Spice Instant Oatmeal

- Pumpkin Spice coffee

- Pinch of brown sugar
- Chopped pecans or granola

- Make oatmeal according to package instructions. I love using milk to make a creamier oatmeal.

- Add a shot of hot pumpkin spice espresso or coffee.

- Stir in a pinch of brown sugar.
- Top with chopped pecans
