Best Fajita Marinade
Those packages of pre-mixed seasonings from the grocery store are fine to use in a pinch or if you’re the type of person who doesn’t keep a stocked spice cupboard. Fresh, homemade DIY fajita seasoning is SO easy and can be made with simple ingredients any well stocked spice cupboard would have.
The marinade itself is just as easy with just a few ingredients from the ‘fridge.
Prepare marinade, chop veggies in large, thick chunks and toss with the marinade and let them soak up to an hour.
Veggies we like:
- Yellow squash
- Zucchini
- Green peppers
- Red onion
- Mushrooms
- Jalapeños
Best Fajita Veggie Skewers
For the skewers: nothing fancy here. We use basic .88 cent skewers from the grocery store. Be sure the soak the skewers in plain water before adding the chopped vegetables to ensure the skewers don’t burn while grilling. Skew the chopped veggies and get them all snuggly and close!
Start your charcoal and get the briquettes good and hot. Place a rack over the coals and add the veggie skewers. Grill until tender and slightly charred. I love a good char!
Serve with soft, hot tortillas, sour cream, guacamole and pico de gallo. I can’t wait for leftovers-fajita veggie skewers served with brown rice, salsa, and sour cream. So yum!
