What better way to celebrate the weekend than with a good home cooked breakfast? I CAN better it, actually. The breakfast quesadilla is a great weekend brunch. Sleep in-check. Eat well-check.
Thom whipped up this cheesy egg and potato breakfast quesadilla for me over the weekend and I fell in love with him all over again. It was that good.
Breakfast Quesadilla
The ingredients are staples here at Cove Cottage: eggs, cheese, homestyle potatoes (we used frozen), hot sauce, and tortillas.
(notice here: Thom didn’t pre-fry the tortillas because he “didn’t know I was taking pictures.” Ha! He’s lived with a blogger for 10+years! If you skip this step you can simply slide the put-together quesadilla into a pan with a little oil and fry it all at once)
Prep all the elements separately; fry some tortillas ’til crispy. Fry the potatoes. Scramble some eggs. When the eggs are almost done, top with cheese until melted. Assemble: tortilla, egg/cheese, potatoes, splash on some hot sauce. Top with crunchy tortilla. Cut into quarters.
I like to combine the sour cream and salsa verde into a creamy dip. I also like to pick up my quesadilla to eat.
These are best eaten right away while they’re crispy and hot. So, so good.
