Day five of being snowed in and I am losing. my. mind. One would have thought that being home for five days would allow for a plethora of tasks to be accomplished; housecleaning, organizing, crafting. But, alas, pretty much all I’ve done is baking and making meals-good for the taste buds bad for the tummies.
I’m also starting to freak out a bit about not having been to work.
Long sigh. Anyway. With some help from Thom I did get a couple of cupboards cleaned out and he noticed we had two jars of molasses. He nonchalantly mentioned his love for molasses cookies and I, being the cleverly perceptive fiance that I am, hopped on Pinterest to find a recipe. It never lets me down.

The spin: I usually don’t have an assortment of alcohol in the house but I do like to have extracts and flavorings on hand. This rum flavoring comes in handy during the holiday baking season and I used it with these cookies with great results. {I usually find mine for half the price at TJ Maxx}
The verdict: Delicious! The double dose of ginger is lovely and the rum adds an interesting flavor. These are definitely going on my must-make holiday baking list.
