We’re heading into day 8 of being cooped up here at the cove. The great Icepacolyse of 2013 has held us captive but there is an end in sight. The ice is beginning to thaw and the roadway out of the cove is reappearing-albeit slowly.
And then there’s this: I found some chocolate-y goodness in my mailbox this afternoon. Hershey’s chocolate spread. Someone, somewhere, knew exactly what I needed at this moment {I’m trying to not figure out just how long it’s been down in the mailbox waiting for me to discover it}.
I’m really trying to show some restraint you guys. It tastes as if someone melted a whole six pack of Hershey bars and jarred it up for me. Y. UM. O. {I channeled Rachael Ray for that}
I had to make a little Icepacolypse treat.
- I took this mini brownie cups recipe from Hershey. Disregard the nuts.
- Replaced the vanilla with a teaspoon of peppermint extract.
- Used the back of a 1/2 teaspoon to make little indentations in each brownie immediately after removing from the oven.
- Filled each indent with a teaspoon {ish} of Hershey’s chocolate spread.
- Topped with crushed candy canes.
It may be a good thing I’ll be able to get away from the house tomorrow. There’s a few of these left and I think they’re calling my name.
