Sometimes I think the WWW can see into my home.
Scene: Gina is in the kitchen searching for something for dinner. She spots a can of pinto beans and thinks beans sound good, how could I use them. Tired of looking and not wanting to make a decision she abandons her search and gets online instead. Meanwhile Thom decides to make a pot of rice for “dessert.” {he’s been wanting rice pudding lately but we haven’t had the ingredients on hand}
Back to Gina; she decides to check out one of her favorite Arkansas bloggers. It just so happens that said blogger has posted a budget friendly meal featuring pinto beans and rice. So weird, right?
Not only did I pin the post-I had Thom make it for me straight away! And, hey! It was SO good.
The Pin- Pinto Beans and Rice with Fried Eggs from Eggs & Herbs.
The Spin: Omitted the green onion {was optional anyway} and didn’t have any jalapeno so Thom cooked in a little cumin with the onion.
The Verdict: We loved it! Thom was surprised that these three elements blended so well. I thought the rice needed a little seasoning. I definitely see this meal being put into rotation around here.
