Make a perfect pie crust is on my Go Mighty list of life goals. Silly, I know, but I’m marrying a pie lover and I’ve been known to enjoy a slice or two myself.
I’ve had great success with this dough recipe from Smitten Kitchen. The dough is easy to make and easy to roll out. It bakes up crunchy and flaky. The filling is a corn and potato combination. We upped the amount of jalapenos but stayed true to the recipe as written. The taste is amazing despite such simple ingredients.
There’s another batch of dough resting in the ‘fridge tonight and it’s destined for blueberry hand pies tomorrow. I’m thinking that our Thanksgiving day pies will be spectacular. I’ll keep you up to date.
