It’s like peanut butter fudge fell into a bucket of oatmeal, got rained on by vanilla, and plopped out little cookies of goodness. Try them. I dare you.
Fudgy Peanut Butter No Bake Cookies
3 cups sugar
3/4 cups unsalted butter
3/4 cup milk
1/2 tsp vanilla
1 1/2 cups chunky peanut butter
4 1/2 cups quick oats
{did you know you can make old fashioned oats into quick oats just by pulsing them in the food processor?}
Over medium heat, combine sugar, butter, and milk. Bring to a rapid boil for one minute. Remove from heat. Stir in peanut butter, vanilla, and oats. Stir to combine and melt peanut butter. Continue stirring to cool mixture. It will gradually thicken. Drop rounded spoonfuls onto wax paper. Cool until set.
Make no bakes into shapes simply by dropping batter into cookie cutters that have been sprayed with no-stick spray. Cool until set and remove cookie cutter. Enjoy!
