So many pumpkin pins, so little time. I will do my best to work through them, though. Also-will try to avoid causing a diabetic coma. Lest you think we’re non-stop sweet eaters over here-I’m really trying to bake just once a week.
Onto the pumpkin madness:
The Pin: Pumpkin Doughnut Muffins from Cooking Classy.
It’s obvious these caught my attention with the “pumpkin” part. But, you guys-doughnuts are sort of my thing. Have I ever mentioned I once was a baker’s helper at a family-owned big box, one-stop grocery/everything else sort of store {Meijer}? It was my most favorite job ever. My most favorite duty at said most favorite job ever? Glazing the cake doughnuts straight from the fryer. How convenient that break-time happened right after the apple cider and pumpkin doughnuts had been glazed. Doughnut heaven, y’all.
The Spin: No spin, really. I just baked them off in jumbo muffin cups because that’s what I had on hand in fun fall colors.
The Verdict: Grab a huge glass of milk and another doughnut muffin, yo! These were a huge hit. We both loved them.
Now, don’t be tempted to skimp out on the vanilla glaze. It’s not only tasty, it serves a much bigger purpose: it keeps the doughnut muffin moist.
