Another summer-time fave around here is hummus and fresh pita bread or hummus and vegetables. I know that it can be made anytime of the year but it’s especially enjoyable when it’s too hot to cook-like tonight.
I’ve had a few pita pins saved in my Breads & Doughs board so I just picked one and went with it. Except, I didn’t really read the recipe all that well and I didn’t have any bread flour so I went with what I had on hand.
I’m not really sure why this is called Laffa bread. Maybe it’s the skillet technique used to cook the dough or maybe it’s a town or region somewhere? Since I used flour I’m sure that my spin is really just pita bread cooked on a skillet. Not all that glamorous and, unfortunately, not all that tasty.

The Spin: Only because I’m a nerd and didn’t read the recipe: I used AP flour and also-I used an electric skillet instead of a grill pan.
The Verdict: Meh. Although cooking these on the electric skillet was handy and made the kitchen less hot than using the oven, I thought they didn’t quite cook all the way through. The bread itself lacked flavor and was fairly bland. I’m thinking I either needed to up the salt in the recipe or salt them before placing on the pan?
Perhaps it was user error, though, who knows? I’m still a novice bread baker. I have half a recipe freezing so I’ll use that up before trying a new pin.
