I love Saturday mornings. When I’m not working, that is. The house is quiet except for that pattering of rain on the steel roof. It’s warm and dark; cozy. It’s the one day I can linger over a bowl of hot oatmeal and enjoy it while catching up on blog reading and emails.
Here’s how I’ve been enjoying my breakfast this morning: toppings made of toasted nuts, cranberries, white chocolate chips atop a bed of sliced banana. Sometimes I sprinkle a bit of brown sugar over the cast and call it an ensemble. I love breakfast on Saturday mornings.

dried cranberries
To toast nuts: place nuts in a dry pan and heat over medium heat stirring or flipping fairly often until a nice nutty aroma eminates. Remove from heat and cool completely. Toss with other ingredients for a tasty topping or enjoy by the handful as a snack. Store in an airtight container. Freezes well also.
