Last week my bestie asked for a Chocolate Cherry Cookies recipe that I used to make every Christmas. I came straight to the blog to get the recipe {doesn’t everyone go to their blog first?} only to find out that I’ve never shared it here.
I got this recipe from the family I was a nanny for and I think it’s originally from the Chicago Tribune if I’m remembering correctly. They’re super chocolate-y and super delish.
- 1 1/2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp each: salt, baking powder, baking soda
- 1/2 cup butter, softened
- 1 egg
- 1 cup sugar
- 1 1/2 tsp vanilla
- 1 jar maraschino cherries
- Frosting:
- 6 oz semi-sweet chocolate chips
- 1/2 cup sweetened condensed milk
- 4-5 tsp cherry juice
- Preheat oven to 350 degrees. Drain cherries and reserve juice.
- Combine flour, cocoa powder, salt, baking powder, and baking soda in a small bowl. Set aside.
- In a separate bowl, beat butter and sugar until light and fluffy. Add egg and vanilla. Add dry ingredients to the wet and mix until combined. Dough will be very stiff.
- Roll dough into 1-inch balls. Using your thumb or the back of a rounded measuring spoon, make and indentation in each ball. Place a cherry in each indent.
- To make frosting, combine sweetened condensed milk and chocolate chips in a small sauce pan over low heat. Stir until melted. Add 4-5 teaspoons cherry juice to thin to spreading consistency. Add more cherry juice as needed if frosting becomes too thick.
- Spread a teaspoon {or more if needed} to completely cover cherry.
- Bake for 8 minutes. Do not over bake. Leave cookie on sheet for a couple of minutes to set and then remove and let cool on a rack. These freeze really well
