Hey, guys! I’m back up and feeling better. Thanks for all the well-wishes these last few days. I’ve been laying low, reading a bunch, and enjoying some yummy comfort food. And, after this dish, it’s probably time to hit the gym. I’ll start that next month. Promise.
Pesto Cream Mac & Cheese
Inspired by The Pioneer Woman
(This makes enough for a crowd but the recipe is easily halved)
((Total comfort food here, people. Cream, butter, cheese. Need I say more?))
Ingredients:
16 oz. heavy cream
4 tbsp butter
1 cup prepared pesto
1 cup shredded Parmesan (I used a 3-cheese blend: Parm, Asiago, Romano)
16 oz elbow macaroni
2 Tomatoes, chopped
salt & pepper to taste
Method:
Cook pasta according to package instructions. Meanwhile, heat cream and butter in a medium sauce pan. Add pesto and stir to combine. Add your cheese and stir until melted. Drain pasta and pour into serving dish. Pour the hot pesto cream sauce over pasta and combine thoroughly. Top with chopped tomato and give a quick toss. Serve immediately.
Note: When Thom reheated this, he added some powdered garlic and cayenne and it was SO much better.
Note 2: When this cools it gets all gloppy and brick-like. Reheat with a little milk.
