The recipe: Greek Veggie Wraps via Annie’s Eats.
Variation: I forgot the couscous-good without…but would have been SO good had I added it.
In addition to the recipe as written, I:
added diced cucumber.
used Greek style pepper rings.
added chopped green onion.
added chopped green pepper.
The verdict: So delish! Seriously good Greek Salad in a wrap. And, this comes from a girl who doesn’t really care for Greek Salad? I know. I’m weird. The flavors just work in the spinach wrap, though. Feta cheese? Meh. But with the wrap: fabulous. Balsamic vinaigrette? Normally, I’d pass. But with the wrap: tasty.
I can’t say enough about the flavors. This will most definitely be put into rotation here…and will be excellent for lunches at work.
