We would never just randomly make and eat a pie for no good reason. So, in honor of Tuesday, we celebrated with this Coconut Cream pie.
I’ve always thought the ratio of whipped-cream topping to coconut cream should be 2:1. And whip your own cream, please. It’s so easy. And tasty. I start with placing a bowl and mixer whip {or beaters} in the freezer for at least twenty minutes. Remove from freezer, add heavy cream, and whip at high speed until soft peaks form. Turn off mixer and add flavorings. For us, 2-3 tablespoons {or more} powdered sugar, a teaspoon of vanilla bean paste, and a teaspoon of rum extract. Mix again until stiff peaks form. Spread over pie and top with toasted coconut.
Also quite good on Mondays, Wednesdays, and especially nice on Friday nights.

I celebrated Tuesday by going on a date with myself for drinks steak and potatoes. ALL ALONE! It was down right selfish! Probably answer to God for that one too.
