I got a lot of good feedback on the packaging. I was thrilled with how they turned out. The idea came from and old holiday issue of Martha Stewart Living {I think!}. I’ve always wanted to use it but haven’t had the opportunity.
So easy to assemble and I had most on hand:
Paper CD/DVD sleeves
Labels made of kraft paper & printed here at home
Decorative Washi Tape {currently obsessed with – mine came from Freckled Fawn}.
Labels were just glued on and accented with pretty striped tape. I also ran the sleeves through the printer to include my blog info…
And for the cookies…I went with Oatmeal Cream Pies because –
1. they’re SO easy to make
and,
2. They taste so, so good!
They’re my fave recipe from last year…and you can find the original post here.
For the cookies you’ll need:
1 cup butter, softened
¾ cup brown sugar
½ cup sugar
2 eggs
1 tsp. vanilla
1 ½ cups flour
1 tsp. baking soda
½ tsp. salt
¼ tsp. cinnamon
1 tbsp. cocoa powder
1 ½ cups quick oats
And, for the Cream Filling you’ll need:
½ cup vegetable shortening
1 ½ cups marshmallow cream
2 cups powdered sugar
1 tsp. vanilla
1-2 tbsp. milk, as needed.
To make:
Cream together the butter and sugars. Add vanilla. Beat in eggs, one at a time until well combined. In a medium bowl whisk flour, salt, baking soda, cinnamon, cocoa powder, and oats. Beat flour mixture into butter/sugar mixture. Refrigerate cookie dough for 15 minutes.
Preheat oven to 350°
Drop about 1 tablespoon of cookie dough onto an ungreased cookie sheet. Bake for 10 minutes. The centers should look a bit undercooked when you remove them. Cool completely on a wire rack.
For the cream filling, beat together shortening and marshmallow cream. Add powdered sugar, adding a tablespoon of milk to start. Add additional milk until cream is spreadable. Beat in vanilla.
Spread about 1 tablespoon of cream filling on the bottom of one cookie. Top with another cookie.

As awesome as your oatmeal pie sounds, I did not get there early enough to scoop any up! I love oatmeal pies. I hope the bake sale was successful 🙂

I have to let you know that I rode my bike over to the sale and bought one of your oatmeal creme pies. Then I went in to Argenta Mkt for something and told the checkout girls about them so they sent someone out to buy at least 2 more. They were declicious! I can't wait to try to make them myself.
