Cranberry Cappuccino Peanut Butter Granola
Ingredients:
2/3 cup cappuccino peanut butter
2/3 cup honey
1/2 tsp cinnamon
1 tsp vanilla
4 cups rolled oats
1-2 cups dried cranberries
Method:
Preheat oven to 350 degrees
Prepare a parchment lined baking pan or a shallow roasting pan. Set aside.
Add the oats to a large mixing bowl. Set aside.
In a small saucepan, combine peanut butter, honey, and cinnamon until heated through. Remove from heat and add vanilla.
Gently add the warmed peanut butter/honey mixture to the oats and stir gently until all the oats are coated. Pour the oat mixture onto your parchment lined baking dish, spreading evenly. If you like your granola clumpy, use your fingers {carefully! the mixture is still very warm!} and press some of the mixture into bite sized clumps.
Place in preheated oven and bake for 35-40 minutes, stirring occasionally. Turn off oven. Remove granola and stir in cranberries. Place granola back into the oven and let dry for 1 1/2 hours.
Enjoy by the handful, atop yogurt, or with a bowl of milk. It’s delicious and addictive any way!
