I love making shopping lists and I love grocery shopping, but when it comes to meal planning- I’m terrible. And I get in a rut. When I’m in charge of deciding what’s for dinner I tend to stick to what I know {and with cooking, it’s very little}, so my shopping list looks the same each week:
- diced tomatoes
- black beans
- white corn tortillas
- whole milk mozzarella
- pasta
- and…bananas.

Cilantro-Lime Rice and Black Bean with warmed flour tortillas and Thom’s guacamole.

Thom chose Spanish Rice and Gazpacho for dinner this weekend. It was my first time making it…but certainly not my last. It was tasty, refreshing, and not to mention, healthy!
For the Spanish Rice {didn’t get a pic :(}
2 {10oz} cans of Rotel
1 1/4 cups rice
1 1/2 cups vegetable broth
1 tbs butter
2 tsp chili powder
1/2 tsp garlic salt
1 tsp cumin
Directions:
1. In a medium sauce pan, combine all ingredients.
2. Bring to a boil. Cover, lower heat, and simmer 25 minutes or until rice is done.
3. Remove lid and fluff rice!

Serve with a dollop of sour cream, a sprig of cilantro, and croutons!

I am eating salad this week – I'm ready for spring and since the weather isn't cooperating I'll at least eat like it's nice outside :o). The family is having Pioneer Woman's creamy spaghetti (never tried it but it looks like something they'll like), enchiladas, ravioli, and a couple other things I can't remember. They are picky eaters and they love pasta so they eat pasta and Italian lots and lots. Man, wouldn't it be nice if we all had good metabolism?
I'm going to try that spicy salad – it looks WAY good. That'll be on my grocery list for next week. :o)

I've been dreaming about that Chick Pea Salad…and I've pretty much liked everything Joy has recommended.
Good for you with the good-eating! I SO need to get on the bandwagon.
