I have a confession. I’m sure you can relate because, surely I can not be the only one! Each time I find a recipe that I’d like to try out for the blog I buy the ingredients and then proceed to eat or drink the ingredients before I even think about attempting the recipe. Crazy, eh? Even worse? Sometimes I end up re-buying the ingredients once or twice more before I can finally get the recipe made. It’s insanity.
It’s not only insane…it’s decadent. And rich. Sinfully tasty and enjoyable. I don’t even want to admit to how many quarts of eggnog passed these lips before I could decide on which eggnog treat I’d try. I keep telling myself that Christmas-time only comes once a year!
Thankfully, I think I’m finally eggnog-ed out…but not before I tried out these lovely little morsels found over at Sandra’s blog, Globetrotter. These Eggnog cookies are soft, chewy, & sugar-cookie-like. I added an eggnog icing that puts them over-the-top!
Eggnog Cookies
Ingredients:
2 1/4 cups flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg {plus more for sprinkling}
1 1/4 cups sugar
3/4 cup butter, softened
1/2 cup eggnog
1 tsp. pure vanilla extract
2 egg yolks
Method:
Preheat oven to 300 degrees.
In a medium bowl, combine flour, baking powder, cinnamon and 1/2 tsp. nutmeg. Mix well with a wire whisk and set aside.
1/4 C. softened butter or margarine
1/3 C. commercial eggnog
1 tsp. rum extract {optional}
In small mixer bowl, beat confectioners’ sugar and butter or margarine until well blended. Gradually beat in eggnog until icing is smooth. Add extract, if using. Makes about 1 1/2

Ahhh! I am so glad you tried them!! I still haven't gotten a chance to make these but your icing idea sounds super fabulous!
Will definitely have to make these for Christmas.
I have a confession to make though ~ I have never tried eggnog before! Haha. I hear it's good though so I am really looking forward to baking these babies with your icing recipe!
