Makes 16 Servings
1 quart peppermint ice cream, softened {I used Edy’s….SO good!!}
1 quart eggnog
48 ounces ginger ale, chilled
24 small peppermint candy canes for garnish
Optional: for a fun adult beverage, add 1 cup rum
Freeze two or three scoops of ice cream for garnish. Stir remaining ice cream until softened {I placed mine in the micro on defrost to quicken the softening}. Gradually stir in eggnog and rum, if using. Transfer to punch bowl, and stir in ginger ale. Hang candy canes around rim of punch bowl and float scoops of frozen ice cream on top- serve immediately.
