It’s official. I’m a Facebook addict. I haven’t even thought about this little ‘ole blog since I’ve been hanging around FB. Actually, I didn’t think that anyone was even reading so I didn’t think it mattered. My mother pointed out that I hadn’t posted in a while so here I am.
Not much has been going on down here in Ark. I was super excited for fall and all that came along with it: pumpkins, sweaters, cool temps, and cozy nights. Arkansas isn’t cooperating, however. It’s pretty much still summer- 80+ in the afternoons and mid 50s at night. It’s difficult to stay “in the mood.” In fact, I’m still wearing summer clothes…and I’ve given up the Month of Pumpkin for this year. I just can’t get into it. I have completed a couple of cute Halloween baking projects, though.
I’ve been wanting to make caramel apples for forever and I finally tackled them a couple of weeks ago, thanks to some easy instructions on one of my new fave baking blogs- Get Off Your Butt and Bake.
This was a super easy method. I didn’t have any light corn syrup the recipe called for. After a quick google search, I read that dark could be substituted. I’m thinking I would have liked the flavor better with light. Thom thought these were fantastic! Also, I halved the recipe with success as I was only coating 4 apples. I liked the pecan caramel apples so much more than the sugared ones.
I poured the leftover caramel into a buttered glass loaf pan and set it in the fridge for an hour or so. It slid right out of the pan and was easy to cut into bite-sized candies.
These kept well in the refrigerator-even two days later.
