I really did mean it when I said it was going to be all pumpkin, all the time around here this month….but I slacked off while I was back in Michigan. Well…slacked off on new recipes that is. I did make two batches of Killer Pumpkin Bars; one for the fam and one for my good friends back at the Maxx.
Before the trip home I did manage to make some good Pumpkin muffins. I think I’ll make them again for work on Friday.
On Tuesday I made a spur-of-the-moment decision to try a Pumpkin Cheesecake after Thom revealed that he’d never had a real homemade cheesecake. {GASP} I know, my thoughts exactly. The poor boy has been thoughtlessly neglected.
I probably should have just patted him on the shoulder and made him that fluffy knock-off version instead, because cheesecake has never been my forte. But after Thom ensured me that everything I’ve ever made has been fantastic and how much he loves my baking, I decided to forge ahead and go for it again. Didn’t work out so well, my friends. It might not have been so bad had I actually given it my full attention…but I forgot about adjusting the time since I had to make the cheesecake into mini cheesecakes in cupcake liners since my spring form pan is packed lovingly away in storage 🙁 {could that sentence have been any longer?} They were a bit over-done. And I sort of forgot they were baking away after I walked away to fold some laundry, sort out my scrap stash, and clean out the bathroom. I used to think of myself as a multi-tasker. Now, not so much.
And then, after I practically cried as Thom helped me get them out of the cupcake pans and after he tried to soothe my bruised baking ego, I thought “hey…I’ll just pretty them up with some white chocolate and pecans. ” I burned the white chocolate chips!!! Did I not know that white chocolate has a lower melting point than dark chocolate. Did I not just walk away and let my little cheesecakes shrivel up and grow thick brown skins. {sigh} Yep, I walked away, again, and ruined that last of the white chocolate. So Thom ate the ugly, little, dry cheesecakes and washed away my baking disaster with a gallon of milk. I had to make-do with semi-sweet chocolate {which Thom doesn’t‘ like}. And I, not wanting to not have a photo to share, set up the lighting studio and shot away.
I’m thinking this will be the end of Pumpkin Mania for this year. But….I do want to master the Cheesecake. We’ll see.
