Didn’t do a much this weekend…..Saturday was laundry and nap day. Oh…and a grocery-getting trip to the W store. They have a new vending machine in the foyer. Have you guys heard of Red Box? It’s a dvd rental vending machine. I’ve never seen these in the North. They’re all over down here. At the W store….outside of Mickey D’s. And they rent for only $1. Yep, a buck. And they’re pretty new movies. So, Thom and I rented Semi-Pro and P.S. I Love You {which I sobbed my way thru this morning. I am definitely buying this dvd..oh..and Thom laughed at my tears several times}.
Today, we went down to the river so I could practice using my camera. Here’s what I got there:
And then, we spotted these awesome hydrangeas down the street on our way home, and Thom stopped and asked the owner if I could photograph her flowers:
And, finally, I ended the night baking. Pecan Pie Cupcakes for Thom, and these ooey-gooey, peanut butter-y, chocolate morsels for me. SO GOOD:
Ingredients:
3/4 cups granulated sugar
1/4 cup unsalted butter
1 tablespoon water
3/4 cup semi-sweet chocolate chips
1 large egg
1/2 teaspoon vanilla
1 cup all-purpose flour
1/4 teaspoon baking soda
1/2 cup peanut butter chips plus about 1/3 cup more for garnishing
1/2 cup semi-sweet chocolate chips plus about 1/3 cup more for garnishing
3/4 cup creamy peanut butter
Prep:
Preheat oven to 350°. Spray or grease 12 muffin cups.
In a large microwave-safe bowl, combine sugar, butter, and water. Microwave on high for 1 minute or until butter is melted. Stir in 3/4 cup semi-sweet chocolate chips until melted. Stir in egg and vanilla extract. Add flour and baking soda, stirring until blended. Allow to cool to room temperature. Then, stir in 1/2 cup each peanut butter chips and semi-sweet chocolate chips.
Spoon batter by heaping tablespoonfuls into muffin cups.
Bake for 13-15 minutes or until top is set and a toothpick inserted into the center comes out slightly wet. Place pan on wire rack. Centers of brownies will fall upon cooling. If not, tap centers with the back of a teaspoon to make a hole.
Place peanut butter in a small microwave-safe bowl. Microwave on high for 45 seconds, then stir. While brownies are still hot, spoon about a tablespoon of peanut butter into the center of each brownie. Top with semi-sweet chocolate chips and peanut butter chips. Cool completely in pan.
**Notes: I used Reese’s Creamy Peanut Butter…..man-oh-man is that stuff good. I could eat it right outta the jar. And I don’t like PB {unless, of course, it’s smothered in Chocolate.
**45 seconds seemed kind of long to melt the PB. Just needs to be a spoonable consistency.
**These things are TO DIE FOR. Loved them. Played around with photographing them in the light box for about 1/2 hour before I actually ate one. My mouth was SO watering.

So…that’s it. I’m loving the camera. I didn’t get to the back of the instruction manual, so I didn’t realize I had the camera set at 10m resolution which has a huge file size–Good for enlarging photos.
