The spark of creativity has been lit. I’m back to feeling crafty and creative and I’m calling out to you; a challenge to put those Pinterest pins to use this year.
Pin it & Spin it is back, baby!
The challenge is easy. Pick a pin, any pin and make it; crafts, recipes, or even those self-care pins you have hidden away. Spring Roll Bowl
Now, about that Spring Roll Bowl.
I’m obsessed with food in bowls. And on plates. But, especially, bowls. I love prepping a bunch of ingredients and throwing them in. It’s great for picky eaters because you add what you like. Thom, for instance, loves mushrooms and I just can’t with them.
My board of Buddha Bowls is inspiring because I can start with the basics and add or delete the foods that we either have on hand or do/don’t enjoy.

For the Spring Roll Bowl I used all the suggested vegetables and added broccoli because I’d been craving it. The Sweet Garlic Lime Sauce was perfect for me. Thom thought it had too much fish sauce. Note: fish sauce is SO CREEPY. And it SMELLS SO BAD. But! We LOVE it in sauces and we use it a lot.
The Spring Roll Bowl is something we will definitely be making over and over. We always have vegetables to use up and I have stockpiled enough rice noodles to last the year. Slight exaggeration. Slight.
